Last night I made us some spicy chicken for dinner.
Ingredients

I cut up four chicken breasts into roughly nugget sizes or smaller and then spread them out in one layer on the bottom of the pan. I spooned a lot of salsa on top and then spread it out so all the pieces had salsa on them (not a thick layer, just a thin layer). I covered the pan with foil and put it in the oven. After about 20 minutes or so I removed the foil and raised the tray and put the oven on broiler to finish cooking and give them a bit of a crunch on top. We served it with rice.
It was super easy and real good. The salsa we have is a chipotle salsa and has a real smokey flavor to it. We might try it again with a layer of bar-b-que sauce instead of salsa.
